Biography

Chibuike Udenigwe is a Full Professor and University Research Chair in Food Properties and Nutrient Bioavailability at the School of Nutrition Sciences, University of Ottawa, Canada where he is also a Cross-appointed Professor at the Department of Chemistry and Biomolecular Sciences, and a Faculty Affiliate at the Institute for Science, Society and Policy. He received his BSc (Hons) in Biochemistry at the University of Nigeria, and MSc in Chemistry and PhD in Food and Nutritional Sciences at the University of Manitoba, Canada. He was a Natural Sciences and Engineering Research Council of Canada Postdoctoral Fellow at the University of Guelph, Canada.
Professor Udenigwe is a Visiting Professor at the University of Johannesburg, South Africa, and an Adjunct Professor at the University of Manitoba and Dalhousie University, Canada. He was a Carnegie African Diaspora Fellow and Visiting Faculty at Alex Ekwueme Federal University, Nigeria and a Visiting Scientist at Wageningen University, The Netherlands.
His research takes the chemical sciences approach in exploring food and health, with a focus on sustainable processing, alternative proteins, functional foods and nutraceuticals, especially bioactive peptides, and functional biomaterials (peptide hydrogels, and protein-based nanodelivery systems and edible bioplastics). His interdisciplinary work focuses on advancing food science, technology and innovation towards achieving sustainable food systems. He has published 260+ journal articles and book chapters, receiving 14,000+ citations and H-index 64, and is the Editor of the book “Food Proteins and Peptides: Emerging Biofunctions, Food and Biomaterial Applications” (Royal Society of Chemistry, 2021). 
Professor Udenigwe serves on journal editorial boards (ACS Food Science & Technology, Journal of Functional Foods, etc.). He is a Fellow of the African Academy of Sciences, Fellow of the Royal Society of Chemistry, Fellow of the American Chemical Society– Division of Agricultural and Food Chemistry, and member of the Global Young Academy.
